Beef noodle soup 牛肉面

Since winter has come, days are shorter. It’s getting dark so early now. It always feels like 9 o’clock in the evening when I start preparing dinner. I have also started eating more spicy than in summer. I love spicy food, but after living in Europe I eat less spicy.

Friends from the Netherlands will laugh if they see I wrote “I eat less”, because they were once really crying by my table. For this depressed winter weather, eating spicy food will make you start sweating and it will feel like after doing exercise.

Beef noodle soup with soft meat, a rich broth and vegetables: it is warm, healthy and classic. It has always been popular in China, you can find it everywhere. Normally people eat it for breakfast. There are also noodles, porridge, soy milk, steamed buns or dumplings for breakfast in China.

Nowadays beef noodles is not only for breakfast, many noodle restaurants quite often are like Chinese fast food; fast to cook and also healthy. Some of those restaurants open 24 hours a day.

It is not difficult to make beef noodle soup, you only need a little bit of time and enough herbs.

What we need:

  • Beef chuck (for stews)                       500g
  • Star anise                                           2
  • Laurel herb (or bay leaf)                     2
  • Black cardamom                                  1
  • Cinnamon                                             1 stick
  • Sichuan pepper                                    1sp (you can replace it with white pepper)
  • Mandarin peel                                      2-3 pieces
  • Chilli sauce                                           1sp (I use sambal to replace Sichuan chilli sauce, it is not spicy but salty)
  • Dark soy sauce                                     1sp
  • Light soy sauce                                     2sp
  • Shaoxing wine or rice wine                   2sp
  • Monocrystal sugar                                6 pcs (if you don’t have any, you can use 1 spoon of ordinary granulated sugar)
  • Garlic                                                    4 cloves
  • Fresh ginger                                         4 slices
  • Spring onion                                          3

How to make it

Cut the beef into pieces of 4x4cm, the put all in a soup pan. Add all herbs and sauces, then add 80 or 90 cl water. Heat on high fire until is starts to boil, then turn to small fire and let it simmer for 2 hours.

Cook noodles and place them in a bowl, add meat and soup.

Garnish with half a boiled egg and some greens. Add some home made chili oil if you dare!

Beef pie

Beef pieI was planning to make dumplings, but I forgot to take out the dumping skins from the freezer, so, I needed to improvise. The beef pies I made are great as a snack, lunch or side dish. You don’t need many ingredients to make them, but some baking skills are required. These are spicy pies with a stuffing of beef mince, union and chilies. Obviously you can leave out the chilies if you don’t like spicy food. In that case you can try adding diced leek or sweet peppers

  • Wheat flour (use bread-flour if you can)  (800 grams)
  • Beef mince (400 grams)
  • Union (2)
  • Fresh chili peppers (4)
  • Ground black pepper (1 tablespoon)
  • Sesame oil (2 tablespoons)
  • (Sunflower) oil (4 tablespoons)
  • Some olive oil
  • Salt (1 teaspoon)
  • Soy sauce light (2 tablespoon)

Step 1: making the dough:

Take a large bowl and add all the flour, then add some warm water and knead until the dough becomes flexible. Then add some olive oil. The amount of water you need depends, so just add a little at the time until the dough is good enough to fold into any shape.

Step 2: the filling

Chop the union and chilies in fine pieces. Then add the ground pepper, sesame oil, salt an soy sauce and mix well

Step 3: making the pies

See HERE for an example. First roll the dough into a long sausage and cut it into pieces of about 3 cm. Put one drop of olive oil onto your hands and rub them. Then, take one piece of dough and spread it out. Then use a rolling pin or, as I used, a small empty bottle, and roll out the dough into a long leaf. Spread the filling onto the leaf (not too much!) and roll it up and place it on its side. Make sure you leave about 3 cm of the leaf left at the end. Don’t put filling onto this part, (this part is for closing the pie, otherwise if there is meat on it it, it won’t stick). Then use your palm gently to push down the roll into a flat pie. This part is most fun! But don’t push too hard though, otherwise you will have broken pie! (See photos for an example)

Step 4: baking the pies

Heat oil on a low fire. Fry the pies for 4 to 5 minutes on one side and flip them, then fry the other side 4 to 5 minutes. See below

TIP: these pies are delicious warm or cold. I bring them to work to eat them (and share with my hungry colleges!) Have fun!

Beef cubes with colourful sweet pepper

Here’s a fast and easy dish, but so tasty! Beef with black pepper always works well together, but today I’ll add some honey and Oyster sauce to make the meat more juicy. Preparation is very easy, and you will be done in just a couple of minutes!

beefWhat you’ll need:

  • A nice piece of beef, without too much fat (400 grams)
  • Union (1.5 small ones)
  • Red and yellow sweet pepper (1 of each)
  • Oyster sauce (3 tablespoons)
  • Honey (1 tablespoon)
  • Black ground pepper (1 tablespoon)
  • Black sesame seeds (1 tablespoon)
BeefPreparation:

  1. Cut the beef into cubes of 2×2 cm. Then marinade the meat in 2 tablespoons of Oyster sauce, the honey and black pepper. Mix well and set aside for about 5 minutes
  2. Meanwhile, cut the union and sweet pepper also in pieces of 2×2 cm
  3. Heat oil in a frying pan or wok and fry the beef cubes 2 to 3 minutes until golden brown. Then add the union and sweet pepper, and one more tablespoon of Oyster sauce. Stir fry 2 to 3 minutes more
  4. Finally, sprinkle the black sesame seeds over the dish and turn off the heat
